Baby Back Ribs with Fresh Plum Glaze
1 1/2 pounds plums, cored and roughly chopped
6 tbsp honey
3 garlic cloves, chopped
2 shallots, chopped
1/4 cup vinegar
1 tsp dry mustard
salt and pepper, to taste
Heat oven to 375 degrees. Place parchment paper on a rimmed baking sheet. Season ribs with salt and pepper, bake in oven for about 15 minutes. Start on the glaze.
Combine plums, honey, garlic, shallots, vinegar, mustard, salt and pepper in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium and simmer, stirring occasionally, for 15 minutes. Transfer to a food processor and puree until smooth.
Brush glaze on ribs every 10 to 15 minutes, until dark brown, crusty, and caramelized, about 1 hour and 30 minutes. When cool enough to handle, cut into individual ribs. YUM!
