Watercress, Apple and Queso Fresco Cheese Salad w/ Cider VinaigretteDSC_0327
10 min prep time

2 cups watercress
2 gala apple, cored and sliced into thin wedges
1/2 cup queso fresco
1/2 medium red onion, sliced into thin wedges
2 tbsn fresh mint, chopped
salt and pepper, to taste
3 tbsn olive oil
1 tbsn cider vinegar
salt and pepper

Prepare Cider Vinaigrette – Whisk extra virgin olive oil, cider vinegar, salt and pepper, put to side.

Core and cut up apple into thin wedges place in serving bowl. In separate bowl combine watercress, onion, mint, olive oil, salt and pepper. Toss to coat. Sprinkle watercress mixture over the apple add cheese, cider vinaigrette and toss. Serve.

Turkey Breast with Cranberry Apple Stuffing DSC_0201
15 min prep, 1 hour bake time

2 Turkey breast, boneless
1 tbsn olive oil
2 cups celery, chopped
1 medium onion, chopped
1 tsp parsley
1 tsp sage
1 tsp thyme
salt and pepper, to taste
2 red apples, chopped
1 cup cranberries
4 cups dry unseasoned breadcrumbs
1 cup fat free chicken broth

Heat oven to 400 degrees, prepare stuffing. Heat olive oil in large skillet over medium heat, add celery and onion, cook until softened. Stir in parsley, sage, thyme, apples and cranberries. Place bread crumbs in large bowl. Add chicken broth and apple-cranberry mixture and mix well.

Butterfly turkey. Turn the breast over, so the side that has the skin is facing down, and lay it flat on the cutting board. Holding the blade of the knife parallel to the board, about halfway down, slice into the thickest portion of the breast. Cut along the length of the breast, but not all the way through. Unfold so the turkey opens like a book. Cover with a piece of plastic wrap and pound with a meat mallet or rolling pin until the turkey is of uniform thickness (about 1/2 inch). Season with salt and pepper.

Spread stuffing evenly (about 3/4 inch thick) over turkey, leaving a 1-inch border. Starting with one short end, roll into a log, completely enclosing the stuffing. Tie twine around the roast in four evenly spaced intervals, then rub olive oil evenly all over. Season all over with salt and pepper.

Roast on a rimmed baking sheet for about 50 minutes to 1 hour. Let rest for 10 minutes.
Slice turkey on a cutting board crosswise about 3/4 inch thick. Serve.

Mashed Winter SquashDSC_0344
5 minute prep, 1 hour bake time

2 Medium squash
2 tbsn Olive Oil
1 tsp sugar
salt, pepper and ginger – to taste

1 tbsn Olive Oil
2 tbsn parsley, chopped
2 tbsn sage, chopped
salt and pepper to taste
1 cup heavy cream (more if needed)

Preheat oven to 400 degrees. Wash 2 squashes, split them in half, and remove seeds. Coat the meat thickly with olive oil and sprinkle with sugar, salt and pepper to taste and a little ground ginger. Arrange cut side up in a shallow baking pan in 1 inch of water. Bake for about 1 hour or until they are brown and very tender when tested with a fork.

Remove from oven, let cool (until your able to handle). Scrape the squash from the skin and mash the pulp with a potato masher. Add olive oil, parsley, sage, salt and pepper, mix. Beat in with spoon, and adding only enough heavy cream to make a smooth puree. Serve.

Apple Dumplings w/ Fresh Whipped Creamapple dumplings
10 min prep, 30 minute bake time

1 (8 oz.) can crescent rolls
1 lg. apple, peeled, cored & halved
2 tbsp. melted butter
1/2 c. sugar
1 tbsp. cinnamon
1/2 c. fresh orange juice

Whipped Cream:
1/2 cup heavy whipping cream
1 tsp vanilla
1/4 cup sugar

Peel, core and cut apple into 8 wedges. Combine sugar and cinnamon and sprinkle half the mixture over apples and coat each apple evenly. Separate rolls into 8 crescents. Put 1 apple wedge in each crescent, place in baking dish.

Boil together the orange juice, sugar, and butter. Pour over rolls. Sprinkle remaining cinnamon sugar over dumplings. Bake at 400 degrees for 30 minutes.

Whip cream, vanilla and sugar until soft peaks. Serve with warm dumplings.

    I missed the show, but i heard great things…..U GO GIRL! Love the Turkey recipe….i do a similar chicken one, but i will definitely try the apple dumplings….again Congrats!
