Ever bake a cake and have to level it, and just trash the scraps? Ever have left over unfrosted cake? You ever wonder– “Hey what else could I do with cake?” — besides enjoying it’s deliciousness with your favorite icing here are a few other ideas.
I just catered an event and baked two large sheet cakes I cut them into small round individual servings and had a lot of scraps left. Instead of trashing the scraps I decided to save it for another dessert (or 3). I had a few ideas in mind: cake pudding, chocolate covered cake balls, and cake crumble cookies. These are all very easy and delicious, try them out and let me know what you think

Cake Pudding
6 ounces chocolate, melted
1/2 cup sugar
1/4 tsp salt
1 tsp cinnamon
1/2 cup milk
2 eggs, lightly beaten
2 1/2 cups crumbled cake
Preheat oven t0 400 degrees. Butter 12 small ramekins and place them on a baking sheet.
Combine melted chocolate, sugar, salt and cinnamon. Stir the milk in slowly and the add the eggs. Beat the entire mixture with a whisk until well blended. Stir in the cake and let soak for a few minutes.
Beat the pudding with the whisk once again. Divide the pudding between the ramekins. Bake 15-25 minutes or until edges look done. Cool for 15 minutes and serve with some fresh whipped cream or ice cream.
Cake Crumble Cookies
1 3/4 cup cake crumbs
1/4 tsp baking powder
1/4 cup butter
1/2 tsp cinnamon
1/4 tsp nutmeg
2 egg yolks
3 tbsn cold water
1/2 tsp vanilla
OPTIONAL:
* 1/2 cup raisins
* 1/4 cup coconut flakes
*1/2 cup nuts
* 1/2 cup chocolate chips
Preheat oven to 350 degrees. Place cake crumbs in a bowl and add all ingredients (except optional fixins). Beat well, then stir in nuts, flakes or chips. Drop heaping spoonfuls onto a greased cookie sheet. Bake for 10 – 12 minutes or until golden brown.
Chocolate Covered Cake Balls
2 cups cake crumbles
2 tbsn Bailey’s Irish Cream or Coffee
6 ounces semi-sweet chocolate, melted
In a bowl moisten the cake crumbles 1 tbsn at a time, just enough to make sure that the crumbles will stick together, you do not want it to be mushy. Using a small scoop or 1 tbsn measuring spoon, scoop out and shape small cake balls and place them on a baking sheet. Put baking sheet in the freezer for about 30 minutes.
Melt 6 ounces of chocolate in the microwave in 30 second intervals until melted, whisk until smooth. Dip cake balls in the chocolate and place on wax paper to solidify, about 5 minutes. ENJOY!
Why oh why do I live so far away?! Those chocloate covered cake balls have my name written all over them! You could always overnight a treat or two, to your Aunt Tea! :0}
