Ever wonder what to do with those over ripe bananas? This week I had 7 over-ripe bananas and I didn’t want them to go to waste. Saturday night I made coconut and pecan banana bread for dessert and Sunday morning enjoyed banana & chocolate chip pancakes. Today I had to get rid of those last two bananas, so I made a super delish batch of Banana Puffs. Some coated with powdered sugar and some dipped in dark chocolate and sprinkled with coconuts! These would be great with your fav jam or sprinkled with pecans or walnuts instead of coconut. Use whatever your tummy desires

Banana Puffs
1 3/4 cups all-purpose flour
2/3 cup sugar
1 tsp baking powder
2 very ripe banana, mashed
1 1/2 tsp. vanilla extract
3/4 cup water
3 cups canola oil for frying
** For toppings: powdered sugar or melted dark chocolate and shredded coconut
Combine the flour, sugar, and baking powder in a bowl until thoroughly mixed. Stir in the bananas, vanilla extract, and water to make smooth sticky dough.
Heat the oil in a deep fryer or large saucepan until very hot (heat for about 5 minutes). Scoop up 1 tbsn of batter and use another spoon to push it off into the oil. Fry in small batches until they turn golden brown, about 3 minutes. Flip them over to fry the other side. Remove from the fryer and let drain on wire rack or paper towels. YUM!
* For melted chocolate – put 1/4 cup chocolate with 1 tbsn butter in bowl. Microwave for about 1 minute. Bring 1/4 heavy cream to a simmer. Pour cream in bowl with chocolate and whisk until smooth. Dip puffs in chocolate then sprinkle with coconut.
