Mango & Bok Choy Stir Fry
It is Day 6 of my fruit/veggie fast I just put together a sweet and very tasty meal inspired by a dish I had at a vegetarian chinese restaurant just a few days ago. It was  a mango and chicken tofu stir fry, my best friend had mentioned it was one of her favorite dishes on the menu at the restaurant and I couldn’t resist I had to try it for myself. It was indeed very tasty and for days stir fried mangoes had been on my mind. All day today I kept thinking about what I had in my fridge that would go great with the mango… then I remembered the bok choy that was sitting in there and needed to be eaten ASAP. So on my way home from work I picked up a mango and this was what I cooked up:



Mango and Bok Choy Stir Fry

2 tbsn peanut oil
4 baby bok choy
1 ripe mango, sliced into strips
1 small red onion, sliced
1 small red pepper, sliced
3 cloves garlic, minced
salt and pepper, to taste

Begin by preparing all the ingredients for the stir fry, separate the leaves and rinse the bok choy (you can chop up the leaves, but I prefer to leave them whole). Slice the mango, onion and pepper and mince the garlic.
Put your wok (or large skillet) on high heat and add the peanut oil. When the oil is hot add the onions, peppers and garlic, stir for about half a minute. Then add the bok choy and stir for about a minute or until the leaves begin to wilt. Add the mango, salt and pepper and stir. Let simmer for about 2 minutes. Serve immediately over brown rice. Yum!

** Fun Fact:
Bok choy – the “white cabbage”
Bok choy, or brassica chinensis to use its scientific name, is classified as a cabbage. Nonetheless, bok choy bears little resemblance to the round European cabbages found in western supermarkets, or to Napa Cabbage for that matter. Its white stalks resemble celery without the stringiness, while the dark green, crinkly leaves of the most common variety is similar to Romaine lettuce. The Chinese commonly refer to bok choy as pak choi or “white vegetable.” Another common name is white cabbage.

    Yeah! I make a stir fry with mango, black beans, onions, and green jalapeno sauce. Trader Joe’s frozen mango is good for cooking with too.

  2. Vegetarian Chicken & Mango stir fry is indeed one of my favs. Jin and I went to Vegetarian Palate in Brooklyn, but Red Bamboo (BK & NYC) also serves this amazing dish. Adding Bok Choy was a great idea Jin, can’t wait to try this version!
