OMG! breakfast today was delish! I made sauteed mushrooms and grits, a very simple and hearty dish. Normally when I eat grits I love to fry up some bacon and crumble it on top with lots of butter – nice and fatty! Obviously that is not an option during my fast, I needed to think of something that would still give me a meaty flavor with my grits and then {Light Bulb} mushrooms came to mind. I LOVE MUSHROOMS! The flavor, the texture, the different varieties. You can sauté, roast, or eat them fresh! I instantly knew I couldn’t go wrong.
So my day started out with a tasty sauté of fresh button mushrooms with a little olive oil, minced garlic, salt and white pepper, and finished with freshly chopped parsley. Serve on top of grits and I had an absolutely fabulous breakfast, in fact I think I prefer this to my fatty usual. YUM!
Hey Jin, this looks awesome. Who’d think that grits is more than just a breakfast item. It’s a healthy substitute for white rice.
